I made this several hours ago and thought "Gee, this is yummy, I should put it in my journal!" And then I actually got around to doing it and realized that everyone and their uncle has decided to post about food tonight. Oh well.

I got an eggplant on a whim at the supermarket today and then, of course, had to figure out what one does with an eggplant. I came up with this recipe, originally from the food network and modified to account for my sad lack of ingredients, despite having just been to the store.

The verdict? Yummy! The sauce has a pleasant taste and just a bit of a bite to it. It also makes a hell of a lot. I should stop making things with the intention of having leftovers, because I now have enough leftovers for an entire week of lunches and it isn't even Monday yet!
