I've been having a fun time the past couple of nights discovering what can be done with Spinach. I, unlike many people, actually like the taste and I've been inventing ways to slip it in to various dishes so that my family (particularly my brother) will eat it. This comes up because we have a very large bag of fresh spinach leaves so I'm trying to use it before it goes bad.

The past two nights I've experimented with the dough setting on the breadmaker. Last night I made spinach and tomato pizza with feta cheese that got two thumbs up from everyone. Tonight was calzones with ricotta, feta and mozzarella cheeses, garlic, tomatoes and spinach and basil. For my brother I made a variation with tomatoes, canadian bacon, garlic, spinach and basil. Big thumbs up from Mom, Dad and Kate, eaten by Joe.

I've run out of dough and spinach ideas, so I think tomorrow I'll try something with pasta and spinach...
